The leaves and stems will keep up to five days when loosely stored in a bag and kept in the crisper drawer of the refrigerator.
Best-cooked whole, the stems and leaves of baby bok choy may be boiled, steamed, sautéed or braised. Add its mild taste and tender texture to stir-fries, stews and soups. Its subtle flavor pairs well with poultry, beef, shellfish, lamb or pork. Use as a substitute for cabbage. Baby bok choy is more than just in a stir fry try it braised, baked, grilled, or on a sandwich. Baby Bok choy pairs well with aromatics such as garlic and ginger, mushrooms, bell pepper, broccoli, carrots, herbs such as basil, cilantro, and mint, sesame seeds, sauces such as soy, hoisin, and oyster, tofu, meats such as poultry, pork, and white fish, noodles, chicken broth, and light-bodied vinegars.
Like other cabbage, baby bok choy is an excellent source of vitamin C, a good source of vitamin A, contains several minerals, and is low in calories. This nutritious green is ideal roughage to aid digestion.
