Heirloom tomatoes known for their rainbow colours and their sweet juicy flesh.
Unlike the red tomatoes you normally seed Heirlooms tomatoes can be green on purpose, and the ones that come purple didn't bruise.
Yellow Heirloom then to be a little more milder then tart, sharp reds and greens have a light but zest bite and then darker varieties have more of a savoury taste than sweet.
Heirloom tomatoes are fragile, bruise easily, and should be used immediately upon ripening. Do not refrigerate. Can be frozen for later use in sauce!
Heirloom tomatoes are most often served fresh as simple preparation allows their intense, tomato flavor to come through. Add slices to salads or layer with basil and fresh mozzarella to make a classic Italian Caprese salad. Blend with strawberries and fresh herbs for a take on gazpacho. Slow-roast to concentrate the tomato's natural sweetness and puree into a dip with garbanzo beans and tahini. Layer in savory tarts, dice into fresh salsa or roast and add to risotto with summer vegetables such as squash and corn.
Rich in vitamin C, tomatoes provide a source of folate and fiber.
